I thought, for my first baking post, I would share with you my Scrummy, Yummy Cookies Recipe. This has been a closely guarded secret, until now, as I wanted to be ‘The Mum who makes the best cookies!’ I have decided to share it with you, so that we can all be, ‘The Mum’s who make the best cookies!’

Scrummy Yummy Cookies

Ingredients

500g butter (at room temperature)

250g caster sugar

397g (a tin) sweetened condensed milk

600g self-raising flour

Various goodies

* This will make about 40 cookies. Although this sounds a lot, you will have no problem finding happy homes for them, as they are so delicious! I have wondered about halving the recipe, as I am certain that this would work, but I have never been allowed. ;o) Also, this would mean you would only use half a tin of condensed milk so, ‘Waste Not Want Not, Bake More Cookies!’ It’s a very well known saying!

Method

Preheat oven to 180 C / Gas mark 4.

Cream together the butter, sugar and condensed milk until creamy.

Sieve in the flour and mix until it is all incorporated, (no need to fold, just pop it in the mixer).

Divide the mixture into 3 bowls, add a different tasty treat to each bowl and mix well. One of my favorites is crushed up Maltesers. Minstrels and Milky Bar Buttons are also good or add Cherries and Raisins for a ‘healthy’ option. ;o)

Roll the mixture into balls, approximately the size of golf balls.

Place the balls onto trays, lined with baking parchment, and flatten slightly with the back of a spoon.

* Leave plenty of room for spreading! *

Bake for 10-12 minutes or until the edges start to brown. Don’t worry if they seem too soft. They will harden as they cool.

After a few minutes transfer to a cooling rack to avoid soggy cookies.

I have recently made 20 larger cookies from this mixture and that worked well too! (I used approx. 80g of mixture for each cookie.) Later this week I am going to attempt to make a Giant Cookie Cake. I will photograph the process, so watch this space!

    Those sound yummy! Strangely enough I have been looking for cookie recipes as I often find home made cookies don’t quite taste right and the kids are a bit bored of my choc chip ones. These do sound nice and I absolutely love condensed milk!! Thank you for sharing!
