I have a bonfire toffee recipe that I used last year. It made toffee that tasted nice but it was really hard. I prefer my toffee to be chewy. I thought if I boiled the toffee for a shorter time it might make it chewy. I was wrong. The sugar didn’t dissolve and it tasted awful.

I searched the Internet for a chewy toffee recipe and when I didn’t find any that I liked, I decided to make my own.

Ingredients
1lb brown sugar
1/2lb black treacle
1/2lb golden syrup
1/4lb butter

Method

1) Put all of the ingredients into a pan cook on low until the butter has melted and the sugar has dissolved.

2) Slowly bring to the boil, stirring constantly.

3) Boil gently for 10 minutes, stirring constantly.

4) Drip some of the toffee into a bowl of cold water to see if it will set. (It should go stringy.)

5) If it sets pour it into a greased tin, if not boil for a little longer and test again.

6) Put in the fridge and allow to set.

7) Cut around the edge of the toffee, turn the tin upside down and tap to release.

8) Using a sharp knife and some muscles, cut it into pieces.
